Edinburgh International Conference Centre (EICC) has launched Nourish Event Catering, a new catering business rooted in Scotland, with a focus on exceptional food, culinary creativity and a more sustainable approach to catering for events, businesses and private occasions across the city.
Combining the best of Scottish produce with the culinary expertise and the operational strength of Levy, Nourish Event Catering has been created to put people and the occasion at the heart of every menu, from major conferences and corporate events to celebrations, meetings and workplace catering.

Building on almost 30 years of delivering events at EICC, we've combined our local knowledge, trusted supplier relationships and understanding of what clients value most with Levy's expertise in world-class hospitality. The result is a catering business rooted in Edinburgh, shaped by the people who know this city best, and focused on delivering exceptional experiences for every event."
The culinary team is led by Levy Executive Head Chef Paul Hood, who brings more than two decades of culinary and hospitality experience, including senior roles at Edinburgh's prestigious Prestonfield House and The Dunstane Hotel in West Coates. A recipient of the HIT Scotland Legacy Scholarship in 2026, Paul will be supported by a brigade of chefs and sous chefs drawn from some of the finest hotels and restaurants around Scotland.
Leading the day-to-day operation of the business is General Manager Caroline Bacigalupo, who works closely with Paul and the culinary team to ensure every order runs smoothly and to a consistently high standard.
Created for a wide range of occasions, from corporate conferences and exhibitions to gala dinners, award ceremonies, weddings and private celebrations, Nourish Event Catering gives organisers more from their catering – more creativity, more choice and greater transparency about where food comes from and its environmental impact.
Nourish Event Catering prioritises and champions local suppliers, with a focus on sourcing produce as close to home as possible. The business has a ban on air-freighted fruit and vegetables, helping to reduce the carbon impact of our ingredients while supporting Scottish producers. From wild Scottish venison to Scottish rapeseed oil, its chefs celebrate the quality and provenance of the produce available on their doorstep, using it as a starting point for creative, seasonal menus.
That might mean peas rather than avocados in guacamole, or Scottish venison rather than beef. The aim is not to make sustainability a talking point for its own sake, but to make better choices that result in food people are excited to eat.

All Nourish Event Catering menus carry detailed climate information, while dishes are designed to accommodate a range of dietary needs without unnecessary duplication or waste.
Nourish Event Catering is based in the Exchange District in Edinburgh and includes a dedicated tasting kitchen for up to 16 people, complete with a live cooking station, which can also be used for client menu tastings.
A convenient drop-and-go delivery service will also be available to organisations within 10 minutes of Nourish Event Catering, offering freshly prepared sandwiches, sweet treats and individual bento boxes for meetings, presentations and office gatherings.
