Elderflower & Lemon Posset with Soft Fruit Salad

 

Ingredients: 

120g Raspberries
140g Strawberry
1 ripe Peach, stoned and sliced

3 tablespoons Elderflower Cordial
400g Double Cream
135g Caster Sugar
Zest and Juice of 1 Lemon

 

Method: 

Place the cream, sugar and cordial in a saucepan and bring slowly to a simmer dissolving all the sugar.
Cook for 1 minute and then stir in the lemon zest and juice.
Cook for 1 more minute
Pour into bowls and chill for 3 hours.
Top with soft fruits before serving.
